Lasagna

Garfield's favourite food. Guess who is the Garfield at home? :p

Western food are usually so much simpler to make versus Asian food. The prep time tends to be much shorter as there's less of slicing, chopping, cutting and blending. Here's my version of Garfield's Lasagna.

Ingredients:
  • 100g - 150g ground meat
  • 1 onion - chopped
  • 2 cloves garlic - minced
  • 2-3 tbsp dried basil (or you can use fresh ones)
  • 2 tspn dried oregano
  • 2 tbsp brown sugar
  • 1 half tspn salt
  • 4 fresh diced tomatoes
  • 1 tin or 250g tomato puree
  • 2 capsicum bulbs - chopped
  • 2 tbsp paprika powder
  • 10-12 dry lasagna noodles
  • 2 eggs
  • 1 pint ricotta cheese
  • 1 half cup grated Parmesan cheese
  • 2 tbsp parsely
  • 1 tspn salt
  • 500g shredded mozarella cheese
  • Grated Parmesan cheese for toppings

Method:

  1. Brown onion, garlic and minced meat in a skillet over medium heat with about 1 teaspoon of butter or oil and fry till the liquid from the meat is dry
  2. Mix in basil, oregano, brown sugar, diced tomato and tomato puree
  3. After about 3 minutes, add in capsicum and paprika powder. Mix thoroughly and simmer for another 20 mins, stirring occasionally.
  4. Pre-heat oven to about 190 degrees Celsius
  5. Bring a pot of water to a boil with a pinch of salt. Add lasagna noodles with a little bit of olive oil and cook for about 5-8 minutes or until Al Dante. Drain the noodles and set aside
  6. In a separate bowl, mix in eggs, ricotta, half cup Parmesan cheese, parsley and 1 teaspoon of salt
  7. In a baking dish, lay a few noodles to cover the bottom. Then layer it with the sauce per #3 and then per #6. Top with mozzarella and put more noodles on top. Repeat
  8. Top with remaining sauce and sprinkle additional mozzarella and Parmesan cheese as desired
  9. Bake in the pre-heated oven for about 30 minutes. Let stand for 10 minutes before serving
